After watching allot of food network shows especially cupcake wars, I have been wanting to bake some cupcakes. I used pinterest to come up with ideas for cupcakes. I deiced to also experiment with creating marshmallow fondant. Let me just say that it is not as easy as it looks. Fondant can get really sticky and with the confectioners sugar it get all over the place, but it was really fun being able to decorate the cupcakes.
This is for the marshmallow fondant, it super easy to make but it is a little messy.
Microwave the 2 cups of marshmellows for 1 minuet.
Then begin to sir in 2 cups of confectioners sugar
Knead the fondant like pizza dough until it's not sticky, add more sugar if it's still sticky.
to add color add two drops in to the fondant and knead it untill the color becomes uniform.
Sprinkle a cutting board with sugar and roll the fondant out , then use cookie cutters.

Ingredients for gluten free cupcakes
Combine 3 eggs, the cake mix, 1 cups of canola oil, 2/3 cup of water, and 2 teaspoons of vanilla extract.
Cupcakes decorated with mini cupcakes.
